Porchetta focaccia
Roman-style focaccia oven-gratinated with mozzarella and parmesan, filled with Ariccia porchetta, fresh rocket, parmesan shavings, extra virgin olive oil, truffle cream and a burrata heart. Finished with black truffle shavings and white truffle oil.
Tortellini with Bolognese ragù
Classic fresh pasta tortellini filled with mixed meat (pork and beef), served in a creamy Bolognese ragù sauce.
Porcini mushroom ravioli
Fresh pasta ravioli filled with porcini mushrooms, served in a 24-month aged parmesan cream, topped with toasted pecan crumbs, black pepper and Maldon salt.
Pumpkin ravioli
Fresh pasta ravioli filled with pumpkin, sautéed with butter, olive oil and sage, with a burrata heart, crumbled amaretto biscuit and crispy speck.
